Abstract
Currently, food security is seen as a matter of great importance, and one of the main challenges today is the supply of food free of agents that may pose a risk to the health of the consumer. The consumption of contaminated vegetables can cause relevant damage to public health, due to problems in production to the lack of preparation by food handlers, causing poor hygiene habits and inappropriate practices. The sale of food products in most open markets is generally considered to be unsatisfactory hygiene, constituting an important vector in the process of contamination and proliferation of foodborne illnesses. The objective of this study was to evaluate the hygienic-sanitary profile of establishments and handlers that sell vegetables in open markets in the municipality of Inhumas-GO. An inspection script was prepared based on the checklist contained in the determinations of RDC nº 216/04, RDC nº 275/02 and in Ordinance SVS / MS nº 326/1997, all from the National Health Surveillance Agency (Anvisa). It was verified with the results that all evaluated fairs presented a low attendance to the analyzed items, the highest value presented of conformities to the items was 33.3%. It is concluded that the fairs studied do not fit the necessary conformities for food security. In addition, assistance from government agencies is needed to improve the general infrastructure of fairs.
