Abstract

In Brazil, the use of pesticides has been intensifying each year, becoming something of concern to the population. Pesticide residues can remain in the food after processing, due to its resistance and difficult degradation. Tomato is an important vegetable in the diet, containing sources of vitamin A, C, carotenoids and antioxidants, obtaining the body's role in protecting against cancer and reducing blood glucose. To expand knowledge, there was a search for articles related to this study, validation methods for the determination of pesticide residues in tomatoes and their derivatives, associated with chromatographic techniques (liquid and gaseous). Initially, 528 articles were found suitable for inclusion in this review, after reading in full, only 15 articles remained. In the last ten years, numerous studies have been conducted related to method validations in the tomato matrix, including fresh tomatoes and their respective products. The pesticide residue detection technique most used in this period is chromatography coupled to mass spectrometry - MS. Only three articles portrayed the determination of pesticides in processed tomato products. This review highlights how important it is to conduct research aimed at processed tomato products and to reassess the values ​​allowed for each legislation, aiming at exposing consumers to the lowest levels of waste.
