Abstract

The honey from Jandaira bee is fairly appreciated by the society as a food endowed with therapeutical and nutritious functions. The guarantee of the product quality is the key factor for its commercialization and ensuring food safety by consumers. Therefore, this study aimed to determine some physico-chemical parameters through the analysis of humidity, pH and acidity in samples of honeys produced by Jandaira bees in the area of Sousa, Paraíba. They were collected with the help of syringe still attached, 10 samples of honeys from different colonies of their species, which were packed in plastic containers afterwards properly identified and brought to the physicochemical lab of food in IFPB Campus Sousa. The Physicochemical analyzes for humidity, pH and acidity were performed in triplicate. It was verified that the values obtained of the samples varied concerning the parameters evaluated. For humidity, it was achieved maximum and minimum averages corresponding to 21,52% and 28,58% respectively; acidity, from 3,24 to 5,09(g/100ml); and pH, from 2,99 and 3,20. The honey Melipona subnitida (Jandaíra) produced in the region of Sousa, Paraíba, is within the suggested specifications for the quality control of stingless bee honey.
